Green Rice and the Mid Autumn Festival


The Vietnamese have kept their traditional culinary traditions alive and they eat green rice to celebrate the Mid Autumn Festival.  Immature rice kernels are roasted over a low flame and then pounded until they are flattened.  It has a pleasant sweet and nutty flavor and can be consumed in various ways.  The Vietnamese also make green rice cakes with mung beans and offer these to their ancestors during the Mid Autumn Festival.  Rice is an integral part of Asian life and it is wonderful that some cultures have kept their old traditions alive.
